This creamy salmon zoodle dish is my go-to when I want comfort food that still feels light and low-carb. Itβs especially perfect for these warm Southern California evenings when turning on the oven feels like a crime.

Low-Carb Creamy Salmon Zoodles β Quick Weeknight Meal
This creamy salmon zoodle recipe uses frozen salmon patties (or fresh salmon) and canned pasta sauce for a fast, delicious low carb dinner thatβs perfect for busy weeknights.
Ingredients
- 1 or 2 large zucchinis
- 2 frozen salmon patties (or 2, 4 oz fresh salmon filets)
- 1.5 cups your favorite jarred tomato pasta sauce
- 2 Tbsp chopped sun-dried tomatoes in oil
- 1 clove garlic, crushed
- 2 Tbsp chopped fresh parsley or basil (or any fresh herb of choice)
- 2 Tbsp capers (optional)
- 1/4 cup cream
- 1/4 cup grated parmesan cheese
Instructions
- Spiralize the zucchini, or slice into thin strips lengthwise.
- Cook salmon patties (or fresh salmon) on high heat, in large covered pan with 1/4 cup water, until water is gone and fish is warmed through (5-8 mins)
- While salmon is cooking, heat zoodles and 1/8 cup water on high for 3-5 minutes until zoodles are barely cooked. Pour off remaining water and set aside.
- When salmon is done, reduce heat to medium. Break up salmon patties in pan and toss in sun-dried tomatoes, tomato sauce, garlic. Cook for 3 minutes.
- Pour in cream, parmesan, capers (if using), and parsley, stir to combine, heat until just warmed through.
- Add Zoodles to salmon mix pan and stir to combine.
